Tomato salad with Indian-style tarka dressing

Turn a classic tomato salad into something special with a hot Indian-style dressing of toasted seeds, curry leaves and lime juice to instantly elevate a single-ingredient salad with bright, fragrant flavours.

This tomato salad makes the perfect side dish, but can also be enjoyed as a light lunch.

What you'll need...

  • 1kg mixed tomatoes, in a variety of colours, shapes and sizes
  • 2 tbsp cold pressed rapeseed oil
  • 20 curry leaves, ideally fresh
  • 1/2 tsp black mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander seeds, lightly crushed
  • 3 garlic cloves, sliced
  • Juice of 1 lime
  • Sea salt flakes and pepper, to season

Method

  1. Cut the tomatoes into a mix of shapes and sizes, then arrange on a serving platter. Season well with sea salt flakes and black pepper.

  2. Heat the oil in a small pan over a medium heat. Add the curry leaves and spices and sizzle for 2–3 minutes.

  3. Add the garlic and cook for a further 2–3 minutes until softened and lightly golden.

  4. Remove from the heat, squeeze in the lime juice, then spoon the hot dressing over the tomatoes. Serve immediately.
