Low sugar granola

Homemade granola is a great healthy breakfast option. Our granola recipe uses oats, pecans, almonds, seeds and honey for a natural sweetener.

Although our low sugar granola recipe uses honey, you can use real maple syrup (another natural sweetener) to make this a vegan granola instead. You can also customise the recipe to include your favourite ingredients like coconut flakes, golden raisins and more.

What you'll need...

  • 180g rolled jumbo oats
  • 50g pecans
  • 50g flaked almonds
  • 1 tsp ground cinnamon
  • 2 tbsp flax seeds
  • 2 tbsp runny almond butter
  • 1 tbsp vanilla extract
  • ¼ tsp fine sea salt
  • 120ml honey or real maple syrup
  • 120ml melted coconut oil

Method

  1. Preheat the oven to 130C / 150C fan and line a large baking tray with baking parchment paper.

  2. In a large bowl, combine the oats, nuts, seeds, salt and cinnamon. Stir to combine.

  3. Pour in the melted coconut oil, vanilla extract, runny almond butter and honey or maple syrup. Mix well until there’s even coverage. Empty the mixing bowl onto the baking tray and use a large spoon to spread the oat mixture in an even layer. If you want larger clumps, use a spatula to gently push down on the oat mix.

  1. Bake for 20 minutes or until lightly golden. Gently stir the granola and press back down with the spatula for extra clumps.

  2. Let the granola cool completely for 45 minutes. The mixture will continue to crisp during the cooling down period. If using dried fruit or chocolate chips, add now.

  3. Once cooled, break the granola into clumps and store in an airtight container at room temperature. The granola will last between 1–2 weeks.
