Focaccia

Serve up this traditional Italian bread and enjoy amongst loved ones.

Our recipe is super easy to follow and full of flavour. This focaccia pairs perfectly with green salads and pasta dishes, or serve with dipping oils if you wish.

What you'll need...

  • 500g strong white bread flour
  • 1 tsp salt
  • 10g instant dried yeast
  • 400ml tepid water
  • 50ml extra virgin olive oil for the dough
  • Further oil and water for topping
  • Flaked sea salt

Method

  1. Stir the yeast into the tepid water and leave to rest for 10 minutes.

  2. Tip the flour into a large bowl and mix in the salt. Make a well in the centre, pour in the yeast mixture and bring everything together with your hand to form a soft dough. Knead briefly in the bowl, then add the olive oil and knead again for a minute until incorporated. Cover with a clean cloth and leave somewhere warm for 30-40 minutes until risen and airy.

  3. To build structure, gently loosen the dough from the sides of the bowl. Slide your hands underneath one edge, lift it up and fold it into the centre. Turn the bowl a quarter turn and repeat. Do this four times so all sides have been folded in. Flip the dough over, cover and return to its warm spot. Repeat this folding process every 30-40 mins, four times in total - it's worth the patience. 

  1. Heat the oven to 220C fan. Grease and line a high-sided 19cm x 26cm (about 7" x 10") rectangular tin. Carefully transfer the dough into the tin and gently stretch it towards the corners using your fingertips. Cover and leave to rest for 10 minutes.

  2. Mix 3-4 tbsp olive oil with 3-4 tbsp water to create a loose emulsion. Dip your fingers into the mixture and press them firmly into the dough to create lots of dimples. Drizzle over the remaining oil mixture, making sure it settles into the indentations. Scatter generously with flaked sea salt.

  3. Bake for 15-20 minutes until crisp and golden on top and beautifully soft inside. Leave for 5 minutes, then lift from the tin and serve warm with salad, dips or simply on its own.
