BBQ cheeseburger

This cheeseburger celebrates pure, bold flavour. The patty develops a deep, caramelised crust while staying irresistibly juicy at its centre. Melted cheese, punchy sauce and crisp pickle come together for a classic done right: rich, satisfying and made for devouring.

You can make the burger patties ahead of time or make just before barbecuing. Simply cook them on the BBQ, or if the weather has turned grey and drizzly, griddle them on a cast iron for the exact same crispy texture and tender inside.

What you'll need...

For the burger

  • 1 large onion
  • Vegetable oil, to drizzle
  • 500g beef mince, at least 20% fat, at room temp
  • 4 processed cheese slices
  • 4 sesame seed buns
  • Butter, softened, to spread

For the burger sauce

  • 2 tbsp mayonnaise
  • 1/2 tbsp ketchup
  • 1/2 tbsp American mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp celery salt
  • 1/2 tsp onion granules
  • 4 gherkin slices, finely chopped, plus a splash of gherkin brine

Method

  1. Light the barbecue. For gas, heat until very hot; for charcoal, wait until the coals are glowing white.

  2. Meanwhile, mix all the sauce ingredients with a good pinch of salt and pepper. Cut 4 slices (about 0.5cm thick) from the centre of the onion, then finely chop the rest and stir into the sauce. Brush the slices lightly with oil and set aside.

  3. Divide the mince into 4 balls weighing 125g each. Flatten each into a disc that’s about the same diameter as the buns. Use your thumb to make an indent in the centre of each patty.

  1. Season the burgers well with salt and place onto the hottest part of the grill (directly above the hottest coals or flame). Add the onion slices to a slightly cooler area. Leave everything to cook, undisturbed, for 3 minutes.

  2. Carefully turn the onion slices; if they’re getting burnt too quickly, sprinkle them with water (although some charring is fine). Flip the burgers and top with a slice of cheese and cook for a further 3 minutes. Split the buns and spread with butter.

  3. Toast the buns butter-side down for about 20 seconds. Place on a board and spoon sauce onto the bases, add the burgers, top with onions and more sauce, then finish with the lids. Wrap in baking paper or foil. Wait a minute, then unwrap and enjoy.
