Simple, rustic deliciousness. Our tomato burrata salad is bursting with flavour, making it the perfect summer dish.

Whether you’re serving it as an appetiser or looking for a light meal, our tomato burrata salad is easy, not too expensive and great for outdoor dining. This meal needs plenty of bread for mopping and loading with cheese.

What you'll need...

  • 200g fresh burrata cheese
  • 100g pesto
  • 500g cherry tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 shallot, finely chopped
  • 2 tsp red wine vinegar
  • Salt flakes and black pepper, to taste
  • Handful fresh basil leaves, for serving
  • Warm, crusty bread, for serving

Method

  1. Take the burrata out of the fridge and leave to de-chill for 30 mins. Keep the cheese in the tub while doing so. 

  2. Preheat the oven to 200C / 180C fan.  

  3. Toss the cherry tomatoes with the olive oil, shallots, salt and pepper in a bowl until evenly coated. Pour onto a baking tray and roast for 10 minutes until softened.  

  4. Remove the tomatoes from the oven and drizzle over the vinegar. 

  1. Start assembling the dish. Carefully place the tomatoes on a plate, spreading them out into a single layer. 

  2. Gently drain the water from the burrata tub and roll the cheese out onto your hand. Place the burrata on top of the tomatoes (do this carefully to avoid damaging the cheese). 

  3. Drizzle with more olive oil and dollop plenty of pesto on top. Sprinkle with salt, pepper and a few basil leaves. 

  4. Serve with plenty of warm, crusty bread. It’s the perfect dish to enjoy during the warmer months.
