What you'll need...

  • 500ml full fat milk
  • 100ml double cream
  • 3 egg yolks
  • 100g sugar
  • 15g matcha powder
  • Fruit, to serve

Method

  1. Put the milk and cream in a saucepan over a medium heat and bring to a boil. Remove from the heat.

  2. In a large mixing bowl, cream together the egg yolks, sugar and matcha powder until thickened (approximately a few minutes). Gently pour in the hot milk and cream mixture, continuously stirring until everything is combined.

  3. Pour the mixture back into the saucepan over a medium-low heat. Cook for 10-12 minutes while continuously stirring until the mixture is thick enough to coat the back of a spoon. Sieve into a clean bowl and allow to cool.

  4. Churn the mixture in an ice cream maker, following its instructions. Once churned, freeze for 4-6 hours, but ideally overnight before serving. Serve exactly how you like it – in a bowl, with a waffle cone or alongside fresh fruit.
