Combine garlic leaves with pine nuts, vegetarian parmesan and fresh lemon juice for a delicious condiment that pairs beautifully with pasta, bread, mozzarella and more.

Garlic pesto is incredibly versatile. We love to coat spaghetti or use it in a potato salad. You can even add the pesto to a toastie or dollop into soup, stirring until combined. There are endless recipe possibilities with our wild garlic pesto recipe.

What you'll need...

  • 50g wild garlic, roughly chopped
  • 4 tbsp vegetarian Parmesan, grated
  • 50g pine nuts, toasted
  • 100ml olive oil
  • 2 squeezes of lemon juice
  • Sea salt flakes, to taste

Method

  1. Place the wild garlic, Parmesan, pine nuts and olive oil into a bowl. Use a food processor and blitz until it’s reached your desired texture.  

  2. Taste, and if you desire, add a squeeze or 2 of lemon juice. Salt to your taste if you wish or add more cheese. This stage is all about balancing the flavours for your own enjoyment. 

  3. Mix in with the pasta or store in a clean jar with a resealable lid. Make sure to cover the surface of the pesto with a layer of olive oil before sealing the garlic pesto up and storing in the fridge.
