Christmas Roast Potatoes

Looking for delicious roast potatoes to serve Christmas Day? Our Christmas roast potatoes are fluffy on the inside and crispy on the outside.
Cooked with garlic and rosemary for added flavour, these roasties can be served alongside any roast dinner and should be covered in thick gravy.
What you'll need...
- 1.5kg maris piper potatoes, peeled and cut
- 2 tsp bicarbonate of soda
- 200ml olive oil
- 1 heaping dessert spoon of duck or goose fat
- 1 head of garlic - separated, but still in its skin
- 2-3 sprigs of rosemary
Method
Add the potatoes to a stock pot and cover with water. Add salt and the bicarbonate of soda and bring to a boil. Par boil the potatoes for 5 minutes and drain - allow to steam dry in the colander.
Pre-heat your oven to 200C fan - add the oil and fat to a large roasting tray and pre-heat in the oven for at least 10 minutes. Slowly and carefully add the potatoes to the hot fat and turn each one, ensuring it is covered with the hot fat.
Roast in the oven for 30 minutes. After 30 minutes, turn the potatoes and return them to the oven. Repeat this process after 15 minutes, adding the garlic and rosemary for fragrance.
The potatoes can take up to an hour, or even longer to get that beautiful crisp golden brown shade. Once done, serve in a preheated oven dish and sprinkle with a few healthy pinches of sea salt.
